Mild Peanut Sauce

I've always loved peanut satay and peanut sauce for dipping. I serve it over stir-fried veggies and chicken. It's a lot easier than you think to make, just add all the ingredients to a blender or food processor and mix well! That's it.

You can use crunchy peanut butter if you like or use smooth like me. It's whatever floats your boat. You will want to use low-fat coconut milk to keep the consistency, the lime juice and apple cider vinegar gives it some tang and honey gives it a little sweetness.

As for the oil - you can use sesame for a stronger, more pungent flavor or use canola for a lighter flavor. The ginger can be either fresh or ground, just watch your measurements - fresh ginger is a lot stronger than the ground ginger so you use less when using the powder. You can omit the garlic if you want as well, it adds a little extra spice.

If you want to add the chopped peanuts, add them after every things been mixed to add a little extra crunch!

This sauce can be served warm or cold, either is awesome!!

Enjoy!!
