Caramel Pecan Apple Crisp with Caramel Drizzle

This recipe I found on Pinterest and I adapted it and made it my own. Here is her recipe. This is a great and easy recipe that tastes warm and comforting, fills the home with a wonderful aroma that will entice all. Enjoy ....

Caramel Pecan Apple Crisp with Caramel Drizzle
Yield: about 6 servings
 
For the crumb topping:
1/2 cup flour
1/2 cup old fashioned oats
1/2 cup brown sugar
1/2 tsp baking powder
1/4 tsp ground cinnamon – I use Nutmeg
dash of salt
1/3 cup unsalted butter, diced into small chunks
1/2 cup chopped pecans **

For the Apple filling:
3-4 large Granny Smith apples, peeled and sliced thin
3 Tbsp butter, melted
2 Tbsp flour
1 Tbsp lemon juice – I use Orange Juice
3 Tbsp milk
1/2 tsp vanilla extract
¼ tsp Maple Extract – I use Mapleine
1/4 cup brown sugar
1/2 tsp ground cinnamon – I use Nutmeg
dash of salt

Instructions
Preheat oven to 375 degrees F.

~   In a medium size bowl combine the crumb topping ingredients with a fork or pastry blender until it resembles small crumbs.
~   Refrigerate while you prepare the apple filling.

For the Apple Filling:

~   In a small bowl, combine melted butter and flour until well blended. 
~   Add lemon juice (I use Orange Juice), milk, vanilla, and maple extract and stir well. 
~   Stir in brown sugar, cinnamon (I use Nutmeg), and salt.
~   Pour butter mixture over apples and toss to coat.
~   Pour apple mixture into an 8x8-inch (or similar size) baking dish and spread into an even layer.
~   Drizzle 1/4 cup of caramel over the apples.
~   Sprinkle crumb topping evenly over the top.
~   Bake for 30-35 minutes or until golden brown and top is set.
~   Remove from oven and allow to cool for at least 10 minutes.
~   Drizzle remaining caramel on top right before serving.


**I use pecans that have been roasted for 10 minutes at 350F; then mix in 2 tbsp butter. The heat from the pecans will melt the butter. Cool for at least 30 minutes before using in the recipe.
